El Salvador’s coffee production is unique, with many producers owning and processing their own land instead of working through cooperatives. Carlos Mendes, the owner of Finca Los Tres Potros, is not only a passionate coffee farmer but also a lawyer. His family has a deep history in coffee production, and driven by his love for the craft, he started regrowing coffee plants and experimenting with various processes. Although natural processing was once rare in El Salvador, Carlos has pioneered this method, focusing on producing high-quality natural coffees, occasionally experimenting with honey processing.

Finca Los Tres Potros is located in the rolling hills of El Salvador, where ideal growing conditions meet Carlos Mendes’ dedication to quality. The farm focuses on the unique Pacamara variety, known for its large beans and distinctive flavors. Each batch is carefully processed on the farm, with the natural (unwashed) method being Carlos’s specialty. This method allows the coffee cherry to dry on the bean, resulting in a fruity, complex cup.
